What would happen to the sun if the moon were to crash with the sun?

Absolutely nothing to the sun. We’d be without a moon, and that would be a Everyone Dies scenario for Earth.

As far as the sun being unaffected, I think you probably over estimate our Moon’s significance or even our Earth’s significance in relationship to the size of the sun. Here’s an image to illustrate the point. In this image the Earth is just a speck. The Moon wouldn’t even be visible it’s so small compared to the sun.
